How we work, range by range
The game
The game is semi-wild. Fallow deer, red deer, mouflon and wild boar live across roughly 1,000 hectares of enclosed forest and mountain in Occitanie. They roam freely, drink mountain water and forage a wild diversity of plants and trees. These are near-wild conditions, with added certainty over exactly what they eat.
Fully wild game can be supplied by season. The quality is identical.

The hives
The honey comes from several apiaries set in remote mountains, chosen against the same standard. The hives receive no chemical treatment, not even against varroa. The bees are never fed, not even organic sugar. The comb is built entirely by them, with no central wax foundation.
The comb is the proof. Honey still sealed in its wax cannot have been heated, or the comb would have melted. It cannot have been filtered or blended either. We leave it exactly as the bees made it.
The honey keeps as it is and is generally available without reservation.
The orchards & the rest
Every grower enters the selection the same way. We taste, we visit and we personally know the people who grow. We guide their practices, or we keep only those already working at the best level.
The fruit is picked to order and at physiological ripeness, usually the day before it ships. It reaches you on average five days after harvest and finishes ripening at home. The rest of the range follows the same rule. Fruit, olives, pollen, nuts, seaweeds and preserves of a rare quality are chosen one by one and gathered in season.
The reservation
Meat is worked on reservation and the fruit is picked for your order. You reserve, each product is prepared to order and the shipment leaves fresh, under controlled cold to your door. Meat is frozen only on request. Honey remains generally available without reservation.
When you reserve, you set the highest amount you are willing to spend. We never go above it, even if that means removing an item from the order to stay inside it. Every piece sold by weight is then weighed at its real weight and you pay only for that weight. The difference comes back to you. The minimum order is 120 € excluding delivery.
